While separators were originally used to separate tissue particles of fruit from pressed juice or concentrates in the clarification process, wakes are now also used as a replacement for presses. The development of this centrifugal technology has gone hand in hand with the development of fruit and vegetable processing operations. The quality requirements for the final product are becoming higher and higher, so the quality level of the technology used has increased accordingly. The increase in the scale of operations meant that the capacity of machines and equipment had to be adjusted. There is a growing demand for environmental protection and this development has led to the emergence of low-emission, energy-saving technologies.
